a slow cooked tuesday supper

tuesday's dinner of buttered turnips, orzo, and slow cooked chicken buttered turnips:

slice the turnips into about 1/4 inch coins.  don't bother to peel them- the whole turnip is edible.  put them in a cast iron skillet or another type of heavy pan with a big pinch of kosher salt and a large pat of butter.  cook the turnips over medium high heat, stirring every now and then.  expect the turnips to brown- this is the intent; they are absolutely delicious caramelized like this.  be sure not to brown them too much because they can become bitter.

 

slow cooked chicken:

Place about 2 1/2 pounds of bone-in chicken pieces in a slow-cooker (or crock pot).  Drizzle with 3 tablespoons olive oil and 3 tablespoons of white wine or chicken broth.  Season with 1 tablespoon of dried rosemary, salt and pepper.  Add about 2 tablespoons of water, 1 lemon (cut in half), and 8 cloves of smashed garlic.  Cook about 6 hours in slow cooker.  Chicken will fall right off the bone.

 

serve the turnips and chicken alongside orzo pasta for a deliciously wonderful, albiet monochromatic, dinner.
