friday night flank steak

enjoy a night at home with your family with a yummy meal of flank steak with white beans, served over arugula. coat a cast iron grill pan with olive oil and place over high heat on the stove.  season a two pound flank steak on both sides with salt and pepper and place in the grill pan.  cook, turning once, for 5-7 minutes on each sides.

while the steak is cooking, warm white beans in a saucepan over medium heat until heated through, about 4 minutes.  i had white beans frozen from a big slow cooker pot i made a few weeks back- i will share the slow cooker recipe soon with other ideas for using white beans.

when the steak is done, transfer it to a cutting board, cover loosely with foil, and let it rest for about 5 minutes.  spoon white beans onto a plate, then slice the steak across the grain and arrange some of the slices onto the top of each mound of beans, top with arugula, and drizzle with olive oil.  using a vegetable peeler, cut thin shavings of parmesan cheese onto each serving.

enjoy with a bold holiday beer or a glass of pinot noir.
