creamy white bean soup
after all of your prep work yesterday, tonight's dinner almost makes itself! i let the ease of tonight's dinner lead me to making monday night's duck ahead of time. let's face it, weekdays are hectic and we wanted to have a festive monday night with a good meal, tasty beer, and football without the hassel of making dinner. plus, i've heard that duck reheats nicely, so i decided to take advantage of that. stay tuned for the roasted duck recipe tomorrow... creamy white bean soup (adapted from williams sonoma food made fast: slow cooker cookbook):
put 4 cups of the white beans, 4 cups of chicken stock, 1 cup of heavy cream, and 1 teaspoon freshly minced thyme in a blender and process to a smooth puree. pour into a saucepan and warm gently over medium heat until just beginning to simmer. do not let the soup come to a boil. season to taste with salt and pepper, ladle soup into bowls, drizzle with olive oil, and serve.
