sweet potato quesadillas

a dear friend shared a similar recipe with me a few weeks ago, raving about how unique, but delicious sweet potato quesadillas are.  i have been craving them since.  i waited until we got sweet potatoes with our farm order to make them.  i hope you enjoy! oh, and remember it's friday night movie night at our house.  we are watching valentine's day tonight...looks terribly cheesy, but in a fun way.  i think i snuck this on our netflix queue without david knowing!

sweet potato quesadillas:

cut 2 medium sweet potatoes into chunks and microwave in a medium size bowl with a small bit of water until soft, then mash.  mince 1 clove of garlic and sautee it in a large skillet with a drizzle of olive oil.  add a bunch of finely chopped kale and sautee until tender.  next, add a small handful of freshly chopped basil, 1 teaspoon of cumin, and the sweet potatoes to the skillet and mix well. turn the heat to low to prevent it from burning.

preheat the oven to 400 degrees.  on a large baking sheet, place tortillas and fill each half with the sweet potato and kale filling, spreading to ensure it covers the whole tortilla half.  top the filling with thin slices of brie, then fold the tortillas to close.  bake until browned and crisp (about 15 minutes).  serve with creme fraiche.
