harvest grain, coconut, and wilted spinach soup
this soup is super tasty! i actually heard an audible "mmm" when i served it for dinner at my house and that's always a good sign, a signal that this soup will enter our regular dinner mix. harvest grain,coconut, and wilted spinach soup:
cook the harvest grains (this is a mix we buy from trader joe's that contains israeli couscous, red and green orzo, split dried garbanzo beans, and red quinoa. it has a delicious nutty flavor and is anything but a bland grain mix.) about 10 minutes. then, add 4 cups (1 box) of vegetable broth, 1 finely chopped onion, 2 large, minced garlic cloves, 2 teaspoons ground cumin, 1/2 can light coconut milk, 3 tablespoons of soy sauce, a sprinkling of kosher salt and freshly ground pepper. reduce the heat and simmer the soup for 20-30 minutes.
put a large handful of fresh spinach leaves in your soup bowl and ladle the hot soup on top. the heat from the soup will wilt the spinach and the spinach touch is amazing! serve with a warmed pita bread sandwich stuffed with spinach leaves, shredded carrots, and edamame humus (my absolute favorite, also from trader joe's!).
