cheese and bean chimichangas

these are so good!  and, super easy.  it's perfect for a saturday night when you would rather do something other than make a long and complicated dinner.  and, if you like them, you will want to tuck this recipe away for later as it is a quick and delicious weeknight meal.  i know everyone is searching for those type of recipes! cheese and bean chimichangas:

spread black bean refried beans into the middle of a flour tortilla and top with shredded cheddar cheese

next, top with scallions and fold all four corners of the tortilla in to make a nicely secured pouch.

 heat about 1/2 inch of canola oil in a deep skillet until very warm.  place the chimichangas in the skiller and fry for about one minute per side, being careful not to get popped with hot oil.  serve with a side of chopped tomatoes, avocado, creme fraiche, chips and salsa.
