weekly dinner menu, march 13th - march 19th
oh. my. goodness. what a week we are about to have. there's st. patrick's day, the start of the ncaa tourney in which the gators have a GREAT chance of walking away with their THIRD title in six years, oh yeah, and the fact that we are sitting on pins and needles awaiting the news of david's residency match!!! first, on monday, we find out if he matched or if he didn't. then, on thursday, IF he did match, our little family of three will be heading to emory for the residency match ceremony where we will be handed a letter telling us where david is going to do his medical residency training. in other words, we will learn where we are going to spend the next five years!!! see. i told you it's a BIG week! david decided to be a radiologist and part of the residency requirements for radiology is to do a one year preliminary or transitional year. this means that we are going through the matching process twice. once for the first year program and then for the four year radiology program. therefore, we could very likely be moving to two different cities. and there are so many possibilities: atlanta, new orleans, chattanooga, seattle, charleston, birmingham, chapel hill, winston salem, dartmouth...oh the anticipation...

sunday: slow cooked red beans and rice (you have prep work for this one: soak 2 pounds of red beans overnight.)
monday: a dinner outing planned in anticipation of good news...
tuesday: grilled peanut butter and jelly
wednesday: vegetable quiche
thursday: another night out to toast our residency city(s)
friday: a roasted supper of fish, roots, and broccoli
saturday: pork chili verde
