roasted fish, broccoli, and roots

while making our fish and shrimp scampi, david and i discovered how much we loved the taste of roasted fish.  and, we also loved that it was super easy to make!  so, it has become our default way of making fish, especially on work nights.

for this dinner, preheat your oven to 400 degrees.  you will first need to dice your root vegetables, place in roasting dish, and coat with olive oil and kosher salt.  the root vegetables cook for about an hour so pop these in the oven then prep your broccoli and fish.

roasted broccoli:

in a large bowl, toss one head of broccoli, cut into bite size pieces, with 2 tablespoons olive oil, 1/2 teaspoon cumin, 1 teaspoon kosher salt, 1/2 teaspoon pepper, and 1/8 teaspoon cayenne pepper.  spread broccoli into a single layer on a baking sheet and roast for about 20 minutes or until broccoli is tender and brown around edges.  toss once about halfway through cooking time.

 

roasted fish:

prep your fillet of fish in a roasting pan by drizzling both sides with olive oil and sprinkling with kosher salt and pepper.  place in oven and roast for about eighteen minutes.
