pork chile verde
i am about to share another one of our trusted dinner recipes that is super simple, yet completely delicious. slow cooked pork chile verde:
you start with your choice cut of pork (we have also tried chicken, which is great, but we always go back to pork for this dish)- sometime we choose to us pork loin, sometimes pork chops, but this time we chose hearty ribs from a local farm. put your pork in the slow cooker and pour 1 1/2 jars of green salsa over the meat (we always use trader joe's salsa verde...we are sort of addicted to it). then, crush about 6 cloves of garlic over the meat. let it cook 6-8 hours over low heat (cooking time varies with the thickness of the meat).
um. so, that's it! you will have a pot of deliciously tender pork to wrap in warm tortillas with avocado and creme fraiche. enjoy.
