blueberry ginger mojito

happy friday!  we have a fun weekend planned...dinner club with friends tonight, baby shower tomorrow, and perhaps the zoo on sunday.  enjoy your weekend.  xxo.

blueberry ginger mojitos:

to make the ginger simple syrup:

peel and grate 1/2 cup of fresh ginger and add it with 2 cups sugar and 2 cups cold water to a saucepan.  bring it to a boil and stir until the sugar dissolves. turn off the heat, cover, and let steep for 15 minutes.  strain and cool in the refrigerator when done.

 

for the mojitos:

add 2 cups fresh blueberries, 2 limes cut into wedges, and 30 fresh mint leaves to a  pitcher.  muddle with a wooden spoon so the blueberries are broken and the mint and lime release their juices and flavor.

when ready to serve, add 8 ounces of the simple syrup, 8 ounces of vodka, and top off with 10 ounces of club soda.  give it a quick stir and then pour into glasses with ice cubes.  garnish with a handful of fresh blueberries and a sprig of mint.  this recipe will make 4 tall glasses.
