crabcakes, roasted brussels sprouts, and orzo salad

a perfectly scrumptious dinner for a friday spring night when you want to kick back and enjoy each other and a bottle of frosty cold beer.  for the menu tonight...trader joe's crabcakes, roasted brussels sprouts, and orzo pasta salad.

first, prep your brussels sprouts by cleaning them and slicing them in half.  put them in a roasting pan, drizzle with olive oil and sprinkle with kosher salt.  roast at 400 degrees for 45 minutes- 1 hour.

next, make your orzo salad.  boil the orzo pasta according to the package directions.  while it is boiling, slice black olives and cherry tomatoes in half and toss into a large salad bowl.  tear in some fresh oregano.  when the orzo is finished cooking, drain and then toss with the olives, tomatoes, and oregano.  throw in some feta cheese crumbles, drizzle with olive oil, and season with salt and pepper.  let cool a bit in the refrigerator while you cook the crabcakes.

sear crabcakes on each side for about 3 minutes, or until browned (i like mine very well done and crispy, david perfers his only golden brown).
