pasta with tomato sauce, mozzarella, and basil with a side of swiss chard

remember a few weeks back when we made homemade tomato sauce?  well, if you made it then, tonight's dinner will be super easy and delicious!  pull out a frozen batch of the tomato sauce in the morning so it will be ready by dinner time.  if you haven't already made it, now's your time to do so.  like i promised before, its super easy.  just click here: http://browngoat.wordpress.com/2011/02/20/tomato-sauce-and-pasta-with-meatballs/ and you can make it time for dinner tonight. the only other steps for tonight's dinner are to boil your pasta according to the package directions, chop small pieces of fresh mozzarella, and tear basil leaves into small shreds.  while the pasta is cooking, saute 4 small cloves of minced garlic in a large, deep skillet with about 1 tablespoon of olive oil.  when you can smell the garlic, add an entire large bunch of rainbow swiss chard, roughly torn into small pieces.  saute until the pieces of chard have wilted.  when you pasta is ready, top it with the tomato sauce then with your mozzarella and basil.  we also had a slice of buttered tuscan bread  and a glass of red wine (or a cup of milk) with our pasta and chard.

voila!  and, just like that dinner is served before 6 o'clock!  hooray for fresh family meals!
