black bean soft tacos
i'm using our last batch of black beans from the freezer for dinner tonight. guess what that means...??? first, it means a simple and delicious dinner for a monday night and secondly, it means another pot of beans to be slow cooked soon to restock our supply:) i get antsy when there aren't frozen beans in the house! to make black bean soft tacos, i warm flour tortillas in the toaster oven on low heat and then place a small spoonful of black beans in the center of the tortilla. next, i fold up the sides (like in the picture) so i can see how much room i have in the tortilla to fill with taco toppings (its sort of like a sundae bar!).
i top the beans first with shredded cheese so it will melt, then scallions, black olives, shredded lettuce, salsa, and a drizzle of creme fraiche. super fast dinner since the major work of bean cooking was done ahead of time. enjoy!
