Weekly Dinner Plan

I proudly (and with a bit of nervousness) voted last week at an advanced polling station here in Georgia.  I know that we will all be glued to our televisions as the results are reported on Tuesday night and I won't say that I am not completely anxious about the outcomes.  This is such an important election...if you haven't done so already, please make your voice heard and go vote!  I am crossing my fingers for what I believe is the only acceptable outcome.  

And, now, menu plans for your week:

Monday- Roasted vegetables over buttery pasta and topped with parmesan cheese.

Tuesday- Chicken Chili Verde for ELECTION night!  I am going to serve this with lots of topping options- tortilla chips, sour cream, cheddar cheese, avocado slices, and lime wedges.  And, of course, corn bread.  There has to be corn bread.

Wednesday- Egg Wraps.  So simple, so satisfying, and delicious. 

Thursday- A salad of apple, lentils, beets, and prosciutto. This salad is so good and perfectly combines the flavors of fall into a lighter dish.  I love it with a good crisp IPA beer and crusty, buttery bread.  We also love it equally when made vegetarian---I leave out the prosciutto and add sliced, raw fennel which adds an excellent and satisfying crunch.

Friday – Pizza night while we share drinks during happy hour(s) with our neighbors and let the children run wild!

Saturday - Grilled hot dogs and sausages while we watch college football on the porch.  

Sunday – Garlicky Greens and Chickpeas with a roasted chicken.
